Certificate in Restaurant Operations - L1

Course Summary
The Certificate in Restaurant Operations which has been designed in
partnership with the London Restaurant Association aims to provide
students with a broad understanding of the operational aspects of the
international restaurant industry, and knowledge of the underlying
principles involved.

This qualification provides the skills and knowledge for an individual to
be competent in routine tasks in various hospitality settings such as restaurants, hotels, catering operations, clubs, pubs, cafes and coffee shops. Individuals may work in a team but always under direct supervision.

ATHE will provide certificates for individual units where the student does not wish to complete the full course.

Assessment
This course will be assessed unit by unit by both practical
and some theory tests and observations.

To achieve a Certificate I in Restaurant Operations, 7 units must be completed:
. all 3 core units
. 4 optional units which must be selected from the list below.

In all cases selection of options must be guided by the job outcome
sought, local industry requirements and the characteristics of this qualification.

Progression
Individuals with this qualification are able to perform tasks such as:
. ability with range of equipment used in the hospitality and catering industry
. serving food and beverage; at a counter or delivering them to tables
. Pouring, plating and clearing
. taking and processing orders and receiving payment
. meeting and greeting
. identification of customer needs
. table reservation
. table layout
. maintenance of workstation
. preparation creation and design of simple dishes
. making simple food items, such as sandwiches and salads
. cleaning and tidying the kitchen and storage areas

Delivery of the course
This course has been designed in that students will
study either at a London Restaurant Association training centre or ATHE
centre.  There is also a high element of practical work on this course so
workplacement is essential.
